Avec son go\u00fbt r\u00e9sineux et poivr\u00e9, la graine du myrique baumier peut nous rappeler la muscade. Ses feuilles, quant \u00e0 elles, s\u2019apparentent au laurier.<\/p>\n<p style=\"text-align: left;\">Le mois d\u2019octobre est la saison des courges et nous avons la chance de pouvoir en d\u00e9guster plusieurs vari\u00e9t\u00e9s au Qu\u00e9bec ; parfois m\u00eame intimidante \u00e0 couper. Un grand couteau et une bonne<\/p>\n<p style=\"text-align: left;\"><img loading=\"lazy\" decoding=\"async\" class=\" wp-image-10588 alignright\" src=\"https:\/\/tremblantrestaurants.ca\/wp-content\/uploads\/2024\/10\/Capture-decran-2024-10-07-112138-300x281.png\" alt=\"\" width=\"254\" height=\"238\" srcset=\"https:\/\/tremblantrestaurants.ca\/wp-content\/uploads\/2024\/10\/Capture-decran-2024-10-07-112138-300x281.png 300w, https:\/\/tremblantrestaurants.ca\/wp-content\/uploads\/2024\/10\/Capture-decran-2024-10-07-112138.png 397w\" sizes=\"auto, (max-width: 254px) 100vw, 254px\" \/>technique simplifieront la t\u00e2che.<\/p>\n<p style=\"text-align: left;\">La courge Red Kuri est par excellence, celle que j\u2019ai choisie pour faire mes gnocchis de courge. Comparativement \u00e0 ceux faits de pomme de terre, ils sont plus l\u00e9gers, d\u00e9licats et onctueux. Dans plusieurs restaurants o\u00f9 j\u2019ai travaill\u00e9 dans le pass\u00e9, on utilisait la muscade pour la confection des gnocchis de pomme de terre. Le myrique baumier, que je broie au mortier avant de l\u2019incorporer dans la pur\u00e9e de courge, prend donc tr\u00e8s bien sa place dans cette recette. Avec une farine de qualit\u00e9, des \u0153ufs et un bon parmesan, nous disposons d\u2019une belle p\u00e2te homog\u00e8ne orange qui deviendra nos futurs gnocchis. Une fois blanchis dans une chauffante d\u2019eau sal\u00e9e, il sera temps de leur donner du croustillant \u00e0 la po\u00eale avec un beurre noisette.
