Mon premier contact avec ce champignon noir et coriace fut \u00e0 travers une d\u00e9coction. Par la suite, j\u2019ai eu le plaisir de le red\u00e9couvrir dans une bi\u00e8re cr\u00e9\u00e9e \u00e0 base de chaga. Depuis, de plus en plus de chefs au Qu\u00e9bec ont commenc\u00e9 \u00e0 l\u2019incorporer \u00e0 leur recette. Mon premier dessert incluant le chaga fut une cr\u00e8me br\u00fbl\u00e9e \u00e0 l\u2019\u00e9rable. Tr\u00e8s appr\u00e9ci\u00e9e par les go\u00fbteurs, je me souviens encore de leur regard quand on leur expliquait la provenance de cet ingr\u00e9dient si intrigant.<\/p>\n<p>C\u2019est seulement quelques ann\u00e9es plus tard, apr\u00e8s avoir lu quelques ouvrages, que je suis all\u00e9 cueillir mon premier chaga qui tr\u00f4nait sur l\u2019\u00e9corce d\u2019un bouleau jaune encore vivant. La cueillette sauvage de ce polypore se fait habituellement en hiver sur les bouleaux blanc et jaune. Les grands froids apporteraient un niveau maximal de certaines mol\u00e9cules th\u00e9rapeutiques. Toutefois, une cueillette en \u00e9t\u00e9 permettrait au champignon de repousser plus rapidement et de se cicatriser avant l\u2019hiver.<\/p>\n<p>En grimpant sur un vieux tronc \u00e0 ses c\u00f4t\u00e9s, j\u2019ai pris le temps de d\u00e9tacher le chancre de chaga du bouleau en laissant volontairement une partie du champignon dans sa fissure. De retour \u00e0 la maison, je l\u2019ai d\u00e9coup\u00e9 en morceaux grossiers pour ensuite leur donner une texture qui ressemblait \u00e0 des p\u00e9pites d\u2019or. Une fois bien s\u00e9ch\u00e9, j\u2019ai pu le conserver pour mes recettes et d\u00e9coctions.<\/p>\n<p>J\u2019adore lire des histoires de l\u00e9gendes et ce champignon, qui est consid\u00e9r\u00e9 comme un super aliment, attire grandement ma curiosit\u00e9 depuis quelques ann\u00e9es.
