Sa r\u00e9putation en Europe reste souvent associ\u00e9e \u00e0 la Seconde Guerre mondiale. Son arriv\u00e9e au Qu\u00e9bec se situe autour de 1803 et nos anc\u00eatres l\u2019auraient baptis\u00e9 le \u00ab chou de Siam\u00bb.<\/p>\n<p>L\u2019Histoire nous raconte qu\u2019un plat nomm\u00e9 \u00abtarte au Siam\u00bb aurait \u00e9t\u00e9 servi dans les camps de b\u00fbcherons. Apr\u00e8s plusieurs recherches, je n\u2019ai toujours pas r\u00e9ussi \u00e0 mettre la main sur une recette, mais j\u2019y travaille.<\/p>\n<p>Quand j\u2019\u00e9tais enfant, ma m\u00e8re cuisinait un rago\u00fbt de viande de b\u0153uf et de l\u00e9gumes o\u00f9 elle incorporait le fameux rutabaga. Malgr\u00e9 une \u00e9mission de t\u00e9l\u00e9vision appel\u00e9e \u00abSur la rue Tabaga\u00bb \u2013 que je regardais avec beaucoup d\u2019attention en 89 \u2013 cette plante potag\u00e8re me laissait indiff\u00e9rent.<\/p>\n<p>Pourtant, aujourd\u2019hui, je salive \u00e0 l\u2019id\u00e9e de d\u00e9guster un plat de viande longuement mijot\u00e9 avec le rutabaga. Il est pr\u00e9f\u00e9rable de le choisir pas trop gros, ferme et jeune. Si vous avez la chance d\u2019avoir une chambre froide dans votre maison, ce l\u00e9gume racine peut se conserver tr\u00e8s longtemps.<\/p>\n<p>M\u00eame si le rutabaga fait des potages fabuleux et des pur\u00e9es exceptionnelles, sa polyvalence en cuisine peut souvent nous surprendre. Le sirop de bouleau, le th\u00e9 des bois et plusieurs \u00e9pices bor\u00e9ales apportent souvent une note parfaite \u00e0 ce l\u00e9gume qui m\u00e9rite tout notre respect.<\/p>\n<p>Pendant la saison hivernale, on voit le rutabaga partout sur mes menus et avec raison. Un plat de viande de cerf brais\u00e9 de la Ferme Richard Lemay \u00e0 Saint-Andr\u00e9-d\u2019Argenteuil fait fureur dans mes assiettes. Ce l\u00e9gume m\u00e9rite assur\u00e9ment toutes ses lettres de noblesse lorsque je d\u00e9cris ce plat.
