N\u2019importe qui peut faire son sirop d\u2019\u00e9rable pour le plaisir, mais en faire la commercialisation dans les r\u00e8gles de l\u2019art est une autre paire de manches.<\/p>\n<p>Les Premi\u00e8res Nations ont d\u00e9couvert cette eau d\u2019\u00e9rable tr\u00e8s sucr\u00e9e bien avant les colons fran\u00e7ais. C\u2019est en d\u00e9gustant le cambium au printemps que les Autochtones se sont aper\u00e7us qu\u2019elle \u00e9tait plus sucr\u00e9e que celle des autres arbres. Le cambium est l\u2019\u00e9corce interne protectrice de l\u2019arbre produite par la mont\u00e9e de la s\u00e8ve. C\u2019est un aliment de survie en for\u00eat. Les Autochtones se servaient d\u2019un roseau ou de roches tranchantes pour faire couler la s\u00e8ve de l\u2019\u00e9rable qui \u00e9tait r\u00e9colt\u00e9e dans un contenant fait d\u2019\u00e9corce de bouleau. Puis, ils laissaient couler la s\u00e8ve dans des r\u00e9cipients d\u2019argile et utilisaient des pierres tr\u00e8s chaudes pour faire \u00e9vaporer l\u2019eau.<\/p>\n<p>Plusieurs ann\u00e9es plus tard, dans les ann\u00e9es 1700, on retrouvait du sucre d\u2019\u00e9rable dans le caf\u00e9 et le chocolat pour la f\u00eate de P\u00e2ques. Au Qu\u00e9bec, plusieurs recettes oubli\u00e9es \u00e0 base de sirop d\u2019\u00e9rable ont suivi, comme la tarte \u00e0 la pichoune ou la tarte \u00e0 la bise.<\/p>\n<p>Dans ma famille, ma grand-m\u00e8re Rose faisait un dessert aux noix et \u00e0 l\u2019\u00e9rable que j\u2019ai fi\u00e8rement mis en valeur dans plusieurs restaurants par le pass\u00e9.
