L\u2019inspiration vient avec les produits disponibles dans ma r\u00e9gion, et je m\u2019inspire de la for\u00eat qui m\u2019entoure.<\/p>\n<p>Dans mon parcours de cuisinier, j\u2019ai eu la chance de travailler avec des chefs qui m\u2019ont appris \u00e0 suivre les saisons et \u00eatre \u00e0 l\u2019aff\u00fbt de ce que la nature a \u00e0 nous offrir.<\/p>\n<p>Aujourd\u2019hui, en tant que cuisinier travailleur autonome, j\u2019ai carte blanche sur ce que je veux offrir \u00e0 celles et ceux qui choisissent mes services de chef \u00e0 domicile, ou simplement aux amis qui passent \u00e0 la maison. Il y a tant \u00e0 d\u00e9couvrir avec la gastronomie qu\u00e9b\u00e9coise en travaillant avec les artisans et producteurs du Qu\u00e9bec. Leur passion me donne envie de continuer en cuisine et de mettre en valeur toute cette richesse.<\/p>\n<p>Avec un solstice printanier qui laisse doucement place \u00e0 l\u2019\u00e9t\u00e9, le mois de mai dans nos belles Laurentides est tr\u00e8s motivant. La neige a disparu en for\u00eat (ou presque) et certaines plantes et fleurs pointent le bout de leur nez. L\u2019odeur en for\u00eat est diff\u00e9rente apr\u00e8s la fonte des neiges. C\u2019est d\u00e9finitivement mon endroit id\u00e9al pour me relaxer.<\/p>\n<p>De retour en cuisine, je m\u2019active pour faire des menus de saison estivale. Je me d\u00e9place en voiture de village en village pour m\u2019approvisionner, que ce soit en viande, en fruits ou en l\u00e9gumes d\u2019une qualit\u00e9 irr\u00e9prochable. Pour les poissons et fruits de mer, nous avons la chance d\u2019avoir V\u00e9ronique et Renaud \u00e0 la poissonnerie \u00d4 Capitaine situ\u00e9e sur la rue principale \u00e0 Saint-Jovite.<\/p>\n<p>En ce moment, j\u2019aime cuisiner un tataki de truite mi-cuit que je passe m\u00e9ticuleusement au chalumeau.
