Sur leurs cent acres familiales, deux jeunes passionn\u00e9s \u00e9l\u00e8vent des volailles au p\u00e2turage et des porcs rustiques en for\u00eat. Vous pouvez retrouver leurs succulents produits dans diff\u00e9rents kiosques de la r\u00e9gion, comme ceux de La R\u00e9colte de la Rouge ou de la Ferme aux petits oignons, ainsi qu\u2019au march\u00e9 d\u2019\u00e9t\u00e9 de Mont-Tremblant tous les samedis de l\u2019\u00e9t\u00e9.<\/p>\n<p>La pintade est un volatile omnivore au plumage sombre. Elle a la taille d\u2019un petit poulet et une chair l\u00e9g\u00e8rement musqu\u00e9e.<\/p>\n<p>J\u2019avais envie de cuisiner la pintade avec une \u00e9pice bor\u00e9ale qui pousse dans les r\u00e9gions nordiques du Qu\u00e9bec. L\u2019odeur du cinq-\u00e9pices m\u2019est venue en t\u00eate. Je me suis alors tourn\u00e9 vers le fameux nard des pin\u00e8des, qui est la fleur m\u00e2le d\u2019un arbuste appel\u00e9 comptonie voyageuse. Le mot \u00abnard\u00bb fait r\u00e9f\u00e9rence \u00e0 une plante aromatique utilis\u00e9e depuis l\u2019Antiquit\u00e9 pour son parfum ou son huile essentielle. On d\u00e9couvre dans cette \u00e9pice des ar\u00f4mes complexes de cannelle, de muscade et de clou de girofle.<\/p>\n<p>Le chou que j\u2019ai choisi pour accompagner la pintade est encore peu connu en Am\u00e9rique du Nord. On le nomme \u00abchou rave\u00bb, et il semblerait \u00eatre le descendant du chou sauvage et du navet sauvage.<\/p>\n<p>Sa chair est sucr\u00e9e et croquante, avec une subtile saveur de radis, tandis que ses tiges et ses feuilles go\u00fbtent fid\u00e8lement le chou.<\/p>\n<p>J\u2019ai d\u00e9cid\u00e9 de faire honneur au chou rave en le cuisant sous vide avec une noix de beurre. J\u2019ai ajout\u00e9 une poign\u00e9e de camerises sur la pur\u00e9e cr\u00e9meuse con\u00e7ue \u00e0 partir des restes de chou. La cuisse de la pintade a \u00e9t\u00e9 brais\u00e9e et aromatis\u00e9e avec le nard des pin\u00e8des.
