The directors of Fairmont Tremblant are pleased to announce the nomination of Eric Beaupré as executive chef of the resort hotel.
Eric Beaupré joined the culinary team at Fairmont Tremblant in August 2013 as executive sous chef. He has recently been promoted to head of the kitchen and is responsible for the restaurant units, banquets and catering services.
Originally from Quebec, Eric is an avid cook and outdoor sportsman. His rising culinary career, combined with his love for nature, led him to the Canadian Rockies and the prairies where he worked for several years in several different Fairmont properties. Now back in his native province with members of his family, he is looking forward to settling into this popular four-season destination in the Laurentians , where he can make known the best regional products around.
At home, Eric takes great care of his garden and is inspired by all the seasonal vegetables that are cultivated. As the new executive chef at Fairmont Tremblant, he decorates his dishes with fresh and colourful ingredients that ideally he likes to choose himself, during his visits to some of his favourite farms. With a judicious approach to nutrition, his creative spirit is stimulated by the contacts he keeps with inspiring colleagues and notable producers. With his career focused on the development of the product and his search for quality, in the kitchen he leaves an atmosphere open for growth, development and creativity.
In his spare time, Eric enjoys mountain biking and walking the trails in the region with his wife and children. When asked about his philosophy on life, he said: “I think wholeheartedly that it is important to stay active, to continue to learn and have fun. ” Whether he is preparing a meal for guests or his children, he works the flavour to provide an experience that is memorable and that instils a sense of community and sharing.
