SeB l’Artisan Culinaire launches a fresh website

After an unusual career trajectory that started with culinary school in Joliette, Quebec, and led him around the globe cooking on private yachts for six years, chef Sebastien Houle arrived in Mont-Tremblant in 2005 with a clear vision: to establish the pre-eminent gourmet restaurant in the area. Today, sEb Artisan remains one of the most popular gourmet destinations among locals and visitors alike.

This July, sEb launches its new website (https://www.seblartisanculinaire.com) to showcase its expanded custom catering services for private and corporate events and gourmet take-out for fine dining at home, including holiday meals with all the trimmings. The Caravane sEb food truck offers street food versions of the restaurant food and is also available to hire for special events.

Eager to sample some of sEb’s signature dishes, my partner and I visited the dining room on a busy Friday evening and opted for the 7- course tasting menu with wine pairings.
The first course was P.E.I. oysters served two ways: a rich and velvety oysters Rockefeller and a raw oyster topped with caviar paired with a sparkling rosé. An auspicious start.

Next came Buffalo-style cauliflower “wings” – also featured on the Caravane sEb menu – a playful explosion of texture and flavour and an instant favourite.
The pan-seared cod with bok choy, roasted radish and potatoes was elegant, balanced and perfectly executed. My choice for a go-to dish for a light take-out dinner. The foie gras served with mini brioche and cheese plate with artisanal crackers were everything they  should be: pure decadence.

But the undisputed showstopper of the evening was a succulent, braised, salted-seaweed- fed lamb with miso, honey and sake, a multi- layered and deeply complex dish that must be appreciated with slow and methodical bites. Wine selections featured unusual discoveries from western France with a white from Gascogne, sauvignon blanc from Touraine, and a pinot noir from Cahors, rounded out by a white rioja and a Tuscan red.
